Lasagna Rolls Recipe

Lasagna sounds difficult to make, which is why I don't have it often. When I'm craving lasagna, I typically just opt for a microwave dinner. This is the easiest lasagna recipe I've found, and it is just as delicious. You can even make it a skinny dish by using fat-free or low-fat cheese. Continue reading to find out how to make these delicious lasagna rolls.

Serves: 9

Ingredients:
  • 9 lasagna noodles (cooked and dried)
  • 24 oz. spaghetti sauce
  • 10 oz. frozen chopped spinach (thawed and drained)
  • 1/2 cup preferred shredded cheese (I used 4 cheese blend)
  • 15 oz. ricotta cheese
  • 9 tbs. preferred shredded (I used Mexican cheese blend)
  • 1 egg
Instructions:
  1. Let spinach thaw according to instructions. Make sure to drain.
  2. Preheat oven to 350 degrees.
  3. Cook lasagna noodles according to package instructions and let dry. Noodles will still feel a little sticky when dry.
  4. Combine spinach, egg, 1/2 cup of shredded cheese, and ricotta in medium bowl.
  5. Spoon just enough spaghetti sauce to cover the bottom of a 9x12 baking dish so the lasagna will not stick.
  6. Lay out lasagna noodles on wax or parchment paper and spread spinach ricotta mixture evenly over each noodle.
  7. Roll up the lasagna noodles and place seam down in baking dish.
  8. Spoon the spaghetti sauce over each lasagna roll.
  9. Top each lasagna roll with 1 tbs. of preferred shredded cheese mixture.
  10. Cover with foil and bake for 40 minutes or until cheese melts.

That's all, folks! There is your easy and delicious lasagna roll recipe.

This delicious dessert is perfect for a hot summer day. It's super easy to make and perfect for any holiday!

Prep time: 30-45 minutes
Cook time: 15 minutes
Total time: 45- 60 minutes

What You'll Need:

  • One package of sugar cookie dough and the ingredients needed according to the package (usually one egg and a stick of butter)
  • 8 oz. package of cream cheese
  • 1/2 cup of sugar
  • 1 tsp vanilla extract
  • 1 container whipped cream
  • Assorted fruits (I used strawberry and kiwi)

Instructions:

  1. Prepare and bake sugar cookie dough according to instructions on the package. Instead of making cookies, press the dough onto the entire baking sheet. Remember to add aluminum foil and cooking spray!
  2. To make your topping, blend cream cheese, sugar, and vanilla extract in medium bowl.
  3. Fold whipped cream into mixture.
  4. When the sugar cookie dough you baked is completely cool, you can spread the topping throughout the sugar cookie crust.

Red Velvet Cake Truffles

Looking for an easy, inexpensive dessert to make? Look no longer. Red velvet cake truffles are delicious and easy to make.

Makes roughly 42 truffles.

Ingredients:

  • One box of red velvet cake mix (and anything you need to bake the cake)
  • 8 oz. cream cheese-softened (I get the Philadelphia bar)
  • 2 bags white chocolate candy melts or at least 20 oz. almond bark

Preparation:

  1. Bake the cake as instructed on the box.
  2. Once the cake has cooled completely, crumble it up into a medium-large bowl. Make sure there are no large clumps and that it is crumbled into fine pieces.
  3. Work cream cheese into cake with hands unless you can no longer see any of the cream cheese.
  4. Shape the mixture into balls and place on large wax paper covered baking sheet. They can be whatever size you like, but I like to make mine just a tiny bit smaller than a tablespoon.
  5. Refrigerate for 3-4 hours or freeze for 45 minutes. If the cake isn't cold, it will fall apart.
  6. Melt chocolate candies according to instructions. Hint: do not get regular white chocolate chips that are meant for cookies. They will not melt. One bag of the candy melts wasn't enough for me, so pick up two. It is also better if you use the double boiler method. Put some water in a larger pan and then put a smaller pan, such as a sauce pan, on top. Make sure the size difference isn't too large because you don't want the top pan touching the water. Heat up the stove so that it brings the water to a simmer and put the chocolate in the top pan. Continue stirring until melted so it doesn't burn.
  7. Use a fork to roll around the cake ball into the white chocolate and place back onto the baking sheet. Repeat for all cake balls.
  8. Let the white chocolate dry (which doesn't take long) and you are done!

That is it for the post. Have a great day and enjoy the truffles!
